How we define "espresso".

There's a hot debate among coffee scholars about whether "espresso" originally meant:

  1. Squeezing awesome flavor from beans with steam,
  2. The speed of a train (and your brain on espresso)
  3. The idea of making a great cup "expressly" for one individual.

We don't know who's right, but for us #3 is the key. We'll never force liquid through a jury-rigged cappuccino machine and call it espresso. We dripp it manually like the pros, one shot at a time, right when you order.

Some coffee is brewed to help you stay up all night…then there’s the coffee we’ve stayed up all night brewing. Like our Oji Iced Coffee, AKA Kyoto Coffee. This syrupy-sweet concoction, beloved by the Japanese who invented it, is so special that it takes 8 to 10 hours to cold brew—dripping at a glacial 42 dripps per minute. Fortune in a cup?

Fortune telling and Turkish coffee have been going hand in hand since the beginning. Here's a fun guide to this traditional custom that you can enjoy with your friends.

Just when you realize that last sip of Turkish coffee will fill your mouth with grounds, swirl your cup three times to distribute the grounds up onto the sides. Now with a swift motion, flip the cup onto the saucer toward yourself and wait for a couple minutes for the grounds to drip down and form patterns.

You should never tell your own fortune. Someone else must read your cup and interpret the symbols for you. The lower half of the cup tells of the past, while the top half foretells forty days into the future. Since all Turkish coffee cups are white inside, white patterns are always "good" symbols, the grounds themselves are considered "bad". Symbols can be grouped together for a prediction.

We use only the best, premium ice cream with some specialty flavors you’ll only find at Dripp®. Feeling daring and adventurous? Try a unique flavor like Maple Bacon or Guinness® Stout or perhaps Nutella®. Purists will love our Vanilla Bean, Chocolate, or Peanut Butter. Flavors change all the time, so it’s never the same experience twice.

French Press

Whether you call it a press pot, coffee plunger, Melior, or cafetière à piston, a French press is a cheap and easy way to make small batches of superior coffee. Follow these simple steps when you're ready to take the plunge.

The Grind - Coarse: Very distinct particles of coffee, like heavy-grained kosher salt. Downright chunky.

  1. Boil as much water needed for the amount of coffee you want to make.
  2. Coarsely grind coffee beans.
  3. Pre-heat your French Press by filling it with warm water from the faucet.
  4. Boil water. Allow boiled water to rest at a temperature of 195-205 degrees Fahrenheit.
  5. Pour warm water out of the press and add ground coffee. Use two level tablespoons for every 6 ounces of water.
  6. Pour just enough hot water over grounds to pre-infuse them. Fresh coffee will expand as gas escapes.
  7. Pour in remaining water and stir.
  8. Place the plunger over the press to keep the heat in, but don't press it down yet.
  9. Let the coffee brew 3-4 minutes
  10. Push plunger down slowly.
  11. Pour and drink the coffee.
It's easy to adjust the strength of your brew by varying the amount of ground coffee you use in a French press.

Is the French Press Really French?

Legend has it that the plunger press technique was accidentally invented in the 1850s by a Frenchman who forgot to put coffee into the water before he boiled it. Thinking fast, he put the coffee grounds in a jar, poured boiling water over them, and strained them out with a piece of screen. As the story goes, the coffee was so much better that the idea took off.

Whether this story is true or not, the first patents for plunger-style pots were granted to Italians: Attilio Calimani in 1929, and Faliero Bondanini in 1958. The Bondanini version, first mass-produced in a French clarinet factory, became wildly successful. Today you can get French presses in many sizes and styles, including single-cup versions designed for commuters and campers.

Turkish Coffee

Turkish coffee is made by boiling ultra-fine grounds of coffee, producing a deep, rich flavor unlike any other. A glass of cold water will help you taste the coffee flavor. The Grind—Turkish: Powdered, like flour. Most inexpensive (blade) grinders will be unable to grind this finely. A true Turkish grind almost makes the coffee like a powder paste.
  1. Pour cold water into an “ibrik" or "cezve," or an open coffee pot. For every 3 ounces of water add 1½ teaspoons of coffee. Let the coffee float as you turn on the stove, but don’t stir just yet.
  2. Turn the heat up to medium, now stir the coffee and add sugar as needed.
  3. Carefully watch the coffee come to its first boil. The coffee will create a circular foam ring with small bubbles called “crema” around the outside of the pot. As soon as the coffee comes to its boiling and the foam folds, remove the pot immediately off the stove before it overflows.
  4. Take a spoon and equally distribute the foam crema from the pot into the demitasse cups before pouring the rest of the coffee over slowly. Don’t hog all the crema for yourself—everyone should enjoy an equal amount in their cup.
Notice how the coffee has a thick layer of foam at the top. You can squeeze out a bit more flavor by boiling it longer, but you’ll lose this foam if you do.
Unlike other types of coffee, you’re not supposed to drink the entire cup. Stop just before you reach the thick layer of grounds at the bottom.

The World’s First Coffee

Coffee originated in Ethiopia, where it was first used medicinally to increase vitality and drive off sleep in the 10th or 11th century. By the 14th century it had spread throughout the Middle East, reaching Istanbul in 1543. In the palace of the ottoman, a new method of roasting, grinding, and boiling coffee was developed—what we know today as "Turkish" coffee.

Espresso

  1. Grind your Static® Classic Espresso to a Fine grind.
  2. Dose at 18-19 grams.
  3. Level the espresso equally.
  4. Tamp at a 90° angle with no more than 30lbs of pressure.
  5. Purge group head and insert portafilter.
  6. Start extraction.

For a perfect balanced and articulate shot of Static® Espresso follow these variables. (Please consider other variables that can affect the result and make any necessary adjustments)

-Extraction should begin at 4-5 seconds
-The completion of the shot should rest between 25-30 seconds
-Volume should be at 1.25oz
-Water Temp 201°F
-Your Static® Espresso should be brunette in color.

Chemex

Scientifically designed to make coffee of any strength without bitterness or sediment, the Chemex appeals to geeks and epicureans alike. Its elegant one-piece design is simple to use, can be used to store iced coffee in the fridge, and looks cool on the shelf. The Grind — Medium: Gritty, like coarse sand.
  1. Open the Chemex-Bonded Coffee Filter into a cone. One side should have three layers. Place the cone in the top of your coffeemaker with the thick portion toward the pouring spout.
  2. Using Regular or Automatic Grind coffee only, put one rounded tablespoon of coffee per 5 oz. cup into the filter cone. If you prefer stronger coffee, use more; there is never any bitterness in coffee brewed using the Chemex method.
  3. When the water is boiling, remove it from the heat until it stops boiling vigorously. It should now be at about 200 degrees Fahrenheit, a perfect brewing temperature. Pour a small amount of water over the coffee grounds, just enough to wet them without floating. This is important because it allows the grounds to “bloom,” so the desirable coffee elements can be released.
  4. After this first wetting simply pour more water, soaking the grounds each time, but keeping the water level well below the top of the coffeemaker. Once the desired amount of coffee is brewed, dispose of the spent grounds by lifting the filter out of the coffeemaker.
The extremely simple design of the Chemex makes it easy to get results comparable to other pour-over methods without a lot of practice.

The Chemex

The Chemex was invented by a German-born chemist, Peter J. Schlumbohm, in 1941. To bring laboratory purity to coffee production, Schlumbohm modified and combined common items of lab equipment, creating a one-piece drip coffee maker made of heat proof, laboratory grade, borosilicate glass. For about 50 years it was only available to his friends and acquaintances, but today it’s used by coffee fanatics worldwide.

In 1956, the Chemex was featured by the Illinois Institute of Technology as one of the best-designed items of modern times—the only coffeemaker they honored.  Chemex brewers and water kettles are part of the permanent collections of the Museum of Modern Art in New York, the Smithsonian, the Philadelphia Museum and the Corning Museum in Corning, NY.

Japanese Cold Drip Iced Coffee

If you’ve got the time, you can make this amazingly smooth and sweet brew at home. Plan ahead so that you have plenty of time for it to brew and chill. If you get seriously hooked, you can always have several batches going at once. The Grind — Medium: Gritty, like coarse sand.
  1. Fill the filter basket with 2.8 ounces of ground coffee or until you’ve reached the top of the filter itself, leaving some room at the top.
  2. Pour filtered, cold or room temperature water over the grounds slowly, until the unit is full, about 35-1/2 ounces. Leave to steep for 8–10 hours, less or more to taste.
  3. Refrigerate completed coffee in a sealed container for up to 30 days. (You’ll get the best flavor during the first 15 days.)
Why so sweet? Cold-brewing causes the compounds in your coffee to break down in a different way, releasing all the flavor and caffeine without the acidity common in hot-brewed methods.

Iced Coffee, Japanese Style

Coffee was first introduced to Japan by Dutch traders in 1609, but the Japanese made it their own with this syrupy-sweet concoction. While the popularity of Japanese Cold Drip Iced Coffee is growing in the US, the best machine for brewing large batches of it is manufactured by just one company, Oji, in the Land of the Rising Sun.

Hario V60 Drip

Want to brew it up at home exactly the same way we do it at the Dripp Bar? This is it. The Grind — Medium: Gritty, like coarse sand.
  1. Open the filter into a cone. drip ground coffee, 13.7 fluid-ounces of water at a temperature of 201–205 degrees Fahrenheit, just under boiling.)
  2. To measure 24 grams of drip ground coffee: Simply set the dripper on your scale and tare your scale to zero. Now add drip-ground coffee until the scale reads 24 grams. Note: 22 grams ground coffee weight will produce a milder cup and 26 grams a stronger cup.
  3. Pre-wet the grounds: Now place the dripper on your cup and tare your scale to zero again, so that you can weigh the water.
    1. We suggest you make a small indentation in the center of the grounds. It makes aiming the hot water a lot easier. Slowly pour just enough water (approximately 1.7 ounces) into the center and then outwards to evenly wet all the grounds. Pouring the water at the right rate throughout the brewing process takes a bit of practice.
    2. Wait about 20 to 30 seconds, as the grounds bloom (fresh coffee releases a lot of carbon dioxide, swelling the grounds).
  4. Add the remaining water:
    1. Slowly start by gently pouring into the center of the grounds and then moving outwards concentrically. Try to not pour water at the very edges at any time and make sure not to fill higher than the level of the grounds themselves. This takes some practice! Any water above the grounds will simply go out the sides without brewing the coffee and your final cup of coffee will lack sweetness as well as fullness. You can start and stop pouring as long as you keep some water in the grounds during the process.
    2. This brewing process, after pre-wetting, should take between 2–3 minutes
    3. Continue pouring until the total weight of the water is about 13.7 ounces.
    4. At the end of the process the spent grounds should be flat and evenly distributed around the circular edge of the filter.
  5. Pour and drink the coffee.

Inside Scoop on the Hario

We chose the Hario V60 for the Dripp Bar because it allows us to get the most great coffee flavor into your cup—more than any other method we’ve tried (and we’ve tried them all). It also gives you great control and is easy to clean up. The flip side is that mastering the V60 takes a bit of practice, but we think the amazing taste is worth the effort.

ONLINE SALES AND TRANSACTIONS

When purchasing online, all transactions are placed at and on the domain address www.dripp.com. All transactions will be billed and listed as Espresso Republic LLC or Dripp Inc.. Espresso Republic LLC is the parent company to the Dripp Inc. Retail Brand, Black Goat® and Static® brands, domains and trademarks.

CREDIT CARDS / PAYMENT METHODS

With any of our online transactions it is easy to use a credit card to make your purchase. We accept all major cards including, Visa, MasterCard, and American Express. There is no surcharge for using your credit card to make purchases with us. Please be sure to provide your exact billing address and telephone number-the address and phone number your credit card bank has on file for you. Incorrect information may cause a delay in processing your order. Your credit card will be billed only upon shipment of your order. Please do not send cash with your mail orders.

SHIPPING AND RETURNS

We ship our products with either FED-EX, UPS or USPS.

If you are not 100% satisfied with a product, we will exchange it or refund the amount of the product (excluding shipping charges). Unopened merchandise may be exchanged for any reason within 5 days of the order date. Custom ground coffee is non-returnable unless you are unsatisfied with the quality. Please call us at 909-465-4101 to obtain a return authorization. Products shipped to 3rd party shipper and/or freight forward house are considered final sale products and cannot be returned or exchanged.

If you receive an order that is incorrect or the product you received is damaged, please contact our office at 909-465-4101 within 5 days of the order date. A refund or replacement will only be issued upon our receipt of the damaged or incorrect products. In the event that a return shipment is authorized for the incorrect or damaged product, we will only be responsible for the return shipping & handling cost from the original ship-to address, via UPS ground shipping. Dripp® is not responsible for any shipping expenses incurred outside of the original business transaction. Products shipped to 3rd party shipper and/or freight forward house are not qualified for return or exchange under any circumstance.

Orders are processed Monday through Friday and will be shipped within 2-3 business days if orders were placed before 1:00pm Pacific Time. You will be contacted if an item is out of stock and shipment will be delayed. Orders are shipped via FED-EX, UPS or USPS within the continental U.S. unless otherwise stated and we do not offer Saturday deliveries. Please provide a physical shipping address for deliveries. It usually takes 5-7 business days for your order to be delivered via UPS Ground.

When going through the checkout process you will be asked to enter in your billing address. ABOUT OUR COFFEE

Dripp® strives to offer only the most amazing tasting stuff. When you’re talking about a spectacular cup of Joe, the choice of Espresso Republic® is a no-brainer. You may have enjoyed it before in a classy hotel, high-end restaurant, or a specialty coffee bar. We’re proud to make the same superior coffee available at Dripp®.

Most national coffee roasters buy their beans in huge batches that get roasted all at once. The trouble is, after sitting in the sun and being hauled around in trucks, ships, and containers, the different layers of green coffee have dried at different rates depending on the amount of sun and or moisture they’ve been exposed to. Dumping ’em all in the roaster at once produces inconsistent results that make it tough to get a perfect roast every time.

That’s why our roasting partner Espresso Republic® only roasts beans in small batches. They buy small lots of green coffee, separate them by the amount of moisture they contain, and adjust the roasting profiles and times accordingly, for that perfect coffee or espresso.

We also like how picky they are about the beans they buy. They visit the farms they order from several times a year to check on farming practices, soil conditions, rainfall, and a host of other factors to ensure that they produce nothing but the highest-quality beans available anywhere. No middle men here.

We rotate our coffee selections on a regular basis to keep things fresh, bringing you the best-tasting brews and seasonal specialties from around the world. Every bean we grind is Fair Trade Certified, purchased directly from the farmers who grow them. Most of our coffees are USDA-certified organic as well.
